One box makes a 8 inch round 3 inch high cake, enough to serve a good 12 generous slices

This is a lovely moist carrot cake recipe, using only the best of oils - Pure Olive oil
(please note there has been a typo with our first print of boxes, unfortunatly the measurement of oil has been missed off, oil measurement should state 'cup' (e.g. 1 1/4 cup)
